WHAT WE ARE EATING
I’ve been terrible lately about documenting what we are eating, but here are some things I’ve been eating on repeat…
This is a taco salad of sorts. Arugula and mixed greens on the bottom (dressed lightly with olive oil and red wine vinegar), a thin layer of Trader Joe’s jasmine rice, my favorite chicken taco mixture (recipe below), fresh tomatoes, fresh purple onion, fresh avocado slices, and black olives. I usually top with some light sour cream and salsa. YUM.
So let’s talk about my chicken taco mixture. I make it every 2 weeks or so, and then I eat on it for several meals. I make nachos, tacos, and the below taco salad. The mixture is simple: 1 pound ground chicken (or turkey), 1 chicken taco seasoning packet, 1 can of ranch style beans (semi-drained), 1 can of Rotel (fully drained). That’s it! Flavorful, filling, and I love that I can just keep grabbing it throughout the week.
I’ve also found a new favorite taco at Velvet Taco! It’s called the Fish n’ Chips. It’s not a traditional taco, but I love it.

I found these stuffed peppers at Trader Joe’s and decided to give them a shot. I seriously cannot believe how delicious they are. You can find them in the refrigerated section by the enchiladas, lasagna, and other prepared meals like that. Two peppers come in the package. I like pairing mine with rice and sugar snap peas. Oh, and they come topped with cheese, but I put a little extra pepper jack cheese on top.

WHAT I’M WORKING ON
I’ve scoured the internet and ordered 10 pairs of denim shorts. I plan on having a super thorough denim shorts review up at the end of next week, and I’m hoping everybody will find a pair they love!
SO THE FRONT RUNNERS ARE…
- this pair because I like how they give me more length than I’m used to, but I still feel cool in them, and I like the roomy leg. At my advanced age :), I need longer options for sure.
- this pair because they are a relaxed fit with some length. Again, I need to be age appropriate (while still feeling cute of course!).
THESE NEXT TWO PAIRS ARE ON SALE RIGHT NOW…
- this pair because they’ve been must haves for me for years, but they’re pretty dang short so beware. I do want to say that the roomy leg openings counteract the shortness a bit, and I don’t feel hoochie in them at all. 😉 I do however feel like they are too short on my mature self to wear out to dinner or something, but I do love running around in them at home and the ranch. And they’re elastic in the back, so you know they are comfy as heck.
- and I just ordered this pair. I haven’t tried them on yet, but I’m intrigued for sure. Love the drawstring and they look so cute!

WHAT WE’VE BEEN UP TO
We’ve been on two college visits this month, y’all. I mean, how in the world is it time to be going on college visits WITH MY BABY. But here we are.
We first headed to OU a couple of weeks ago with 3 of Carter’s friends and their mamas. A great time was had by all!
Chris and I went to OU, so I loved being back on campus. Carter has grown up loving OU and going to games, so it was fun to show our friends around.


The tour at OU was great.

The OU campus is seriously beautiful, and the library really shows off. You know what else shows off? Some of the dorms are pretty newly renovated and AMAZING. They are 1000x better than my dorm when I was there a million years ago.

I loved spending time with these mamas and our boys. Several of the them are definitely interested in OU. Boomer!

This past weekend we went to A&M. This time 5 friends and their mamas joined us. It was extra fun because we were able to spend part of Sunday with everybody at the ranch before heading to College Station on Monday morning. You know the boys had to get some fishing in.

We rode around on Rangers, the guys fished, there were some poker games, we grilled out, and then we tried to get to bed at a decent hour since we had an early morning. We wrangled the boys to grab a picture of all of us before pulling out at a little after 7:00.
And would you look at sweet Charlie. He sure did love having everybody there. #ranchmascot


We took the general tour and then took a dorm tour.

I seriously can’t believe that our babies are going to be heading off to college next year. Several of these boys are now interested in A&M as well.

We swung by the Dixie Chicken before heading back to McKinney. The burgers were delish, and I loved the onion rings too.

Here’s what I realized after the A&M tour…
I think Carter will be happy at either school! I think he will fit in at both schools! There’s really not a bad choice to be made here! 🙂
So, here’s what I’m going to do. I have been (and will continue to be) praying for where he BELONGS. Chris and I don’t know the best place for him… and Carter doesn’t even know the best place for himself… BUT GOD DOES and that bring me so much peace. I’m consistently praying for God’s guidance to help Carter discern the very best spot for himself. I want him to be where he will find his people, where he can grow as a person, and where he can grow closer to God.

WHAT I’M EXCITED ABOUT

Even if it’s the only Colleen hair product you use, you will still notice that the conditioner alone makes your hair shiny and soft. I swear by it. And I know this shouldn’t really matter, but I happen to love the pale pink packaging. The products look pretty in your shower, and I appreciate that!
Replenish and Shine Daily Conditioner

Next up, the hair mask! Before they came out with the conditioner, I would use small amounts of this mask as my daily conditioner. In fact, I loved how my hair felt so much after using it that I was pretty sure I wouldn’t love the conditioner as much, and I would just continue to use this mask as my conditioner.
HOWEVER, I fell in love with conditioner too, and now I use the mask more as an intensive hair treatment. My goal is to use it once a week, but the truth is, I just use it when I have some extra time to spend in the shower. Instead of using just a tiny bit like I used to, I now use a good amount, massage it all over my head, and I like to leave it in for a bit to get the full benefit. I like to leave it in for a minimum of 5 minutes, but a couple of times I’ve even been known to get out of the shower and vacuum the house or something with it in before rinsing it out.
And this mask is INCREDIBLE if your hair is really tangled for some reason. If I’ve worn a scarf or been out in wind, I always use this mask.
Quench and Shine Restorative Hair Mask

The Protect and Perfect Styling Cream (on the right) is what I apply to my damp hair right before drying it. It’s a heat protectant, it smooths, and it also aids in taming flyaways.

My mom said after getting older, she now washes her hair much less frequently than she used to have to, but she says “the serum livens my hair up between washings and gives it the sheen that it needs.” But yes, she also works a little bit through her damp hair before she dries it with her hair dryer.

WHAT I’M WATCHING
Y’ALL. I’ve been watching Scandal for the first time and OHHHHHHHHHHH MYYYYYYYYY WORRRRRRRRRRRRRRRRD.
There’s 7 seasons so it’s a big ol’ undertaking, but I look forward to each episode and to say it holds my attention is the understatement of the year.
And if you’re looking for a NEW show, I’ve got one of those for you as well. Kerry Washington happens to be in this one too.
After a murder shatters the lives of three best friends, their decades-long bond is tested when an investigation reveals betrayals and shocking truths.
There are twists and turns that I haven’t suspected at all. It will keep you on the edge of your seat for sure.

WHAT I’M WEARING / SHOPPING FOR
This lace pintuck top jumped into my cart, and I’m so happy it did! It has fluttery sleeves, a flowy fit, and great details. I love the textured lattice pattern, the split neck, and the soft pleats. For size reference, I’m wearing a medium.
These denim shorts are soooooooo good. I’m telling you, they are THE denim shorts many of you have been looking for. I’m guessing they will probably be sold out by the time summer rolls around, so you need to grab them now. They have a 6″ inseam, so they provide a good amount of length, but I don’t feel matronly in them at all! I feel covered, but cute. Basically I still feel like a cool and hip mom, while still managing to stay totally age appropriate. They are a slim cut (which makes them flattering), but I love the roominess of the leg opening. I’m wearing my regular size 4.

WHAT ARE MY RECENT AMAZON PURCHASES
I grabbed two beach bags that I’m super excited about. I got 1 for here and 1 for at the ranch for when we go to the lake. I haven’t opened either of them yet, but they both look awesome.
I got the Medicube mask because my girlfriend Cassie keeps raving about it, and watching her peel it off her face looks so satisfying! Haha! 🙂
The gold bracelet already arrived, and it is trash. I’m sending it back because it’s way too shiny and looks cheap.
I’m undecided on the wooden necklace. I pulled it out of the box and think I like it, but I need to try to style it in outfits before I know for sure.
The last multicolor necklace is cute as can be and I’m definitely keeping it. Stay tuned to see it styled!

I opened an e-mail last night letting me know that these jeans had been restocked!
I couldn’t resist these springy jeans last month, but they sold out pretty dang fast and lots of y’all were bummed. They are a subtle barrel fit, and I love them. In fact, these are the only pair of barrel jeans I’ve ever tried that I actually like and don’t feel ridiculous in. 😉 The “poppy” color is so fun, and these jeans are going to be such a nice addition to my closet. They are stretchy, true to size (I’m wearing a 27), and totally on trend.
You might not have known that you needed a pair of poppy colored jeans in your closet, but that’s what I’m here for. #becauseyoudoinfactneedthem 🙂

This layered crew pullover is also not fully stocked in this pale green and in a pale pink as well! This has become a staple in my closet. I’ve worn it at least 8x since getting it. The sweatshirt is super soft and comfy, and the little crewneck that is peeking out from the neck and the hem really elevate this sweatshirt and will instantly help you look pulled together. I’m in a medium, and it’s a perfectly relaxed fit and roomy fit. A small would definitely fit, but I like the oversized look of the medium. If you don’t want it quite so oversized, size down. It has 31 reviews, and almost every single one of them is 5 STARS.

Here’s the jeans styled one more time, because whenever I highlight a pair of colored pants, I always get questions about styling ideas.
Now, I’m sure that I have some patterned shirts in my closet already that will work great with them, but just plain old solid black looks good too. This Peter Pan collar blouse surprised me in all the best ways. I just think it’s a super cute fit, and I know I will reach for it all the time. It’s hard to tell in my pictures, so I think you should click over to the site to see the really pretty scalloped detailing and pleated ruffles. It’s tailored, but totally feminine and girly. LOVE. For size reference, I’m wearing a medium. It also comes in a really pretty pale pink.
