What’s Up Wednesday

Happy Wednesday, Everybody!  It’s time for us to join up today with Shay and Mel and let everybody know WHAT’S UP with us this fine Wednesday!

*What we are eating.*

Several weeks ago I shared what I’ve been eating on my GET HEALTHY journey, and I got lots of great feedback.  Many of you wanted for me to continue to share what I’m eating.  Well….I’m not a chef, and I’m totally a creature of habit, so I don’t have a ton of new stuff to share.  I’ve basically just found some things that are quick to prepare, that seem to be helping me lose weight, and I’m eating those things over and over again.

I’m continuing to eat the Bird’s Eye Zucchini and Lentil Pasta like it’s going out of style.  I’m still putting the same roasted veggies in it (broccoli, cherry tomatoes, and corn), but now I’m throwing in a bit of protein too.  I like using leftover grilled chicken (that we marinate in low fat Italian salad dressing).

But my favorite way to eat it is with leftover salmon, with a little bit of Trader Joe’s Everything But The Bagel Seasoning, and a dusting of grated parmesan.  And I haven’t seen this version, but they also make a spiral pasta with marinara sauce (although they say it’s only sold in stores and not online).  But if you do their grocery pick up, you might get lucky!

One of the new items I’ve added into the rotation is avocado toast with a fried egg.  I eat this for lunch with a side of roasted sweet potatoes.  I could legit eat like 5 pieces of toast topped just like this every morning.  SO SO GOOD.

Okay, here’s another item I’ve added in to the rotation.  For the first couple of months, I tried to really reduce my sugar by only eating fresh fruit.  HOWEVER.  I’m now eating a 1/2 a cup of this every 2-3 evenings.  IT IS SO FREAKING GOOD.  It’s like 4 grams of fat and about 120 calories for 1/2 a cup.   Stopping at a 1/2 cup is reallllllllllllllly challenging, but I just fix a tiny little bowl.  AND IT’S WORTH IT.  I should probably mention that we eat dinner really early over here.  Like, we are typically done eating and cleaning up the kitchen by like 5:45.  So, on the nights I do eat dessert, I eat that early too…usually by like 6:30.  So, even with dessert, there’s still a lot of time before bedtime.

Here’s an example of one of my dinners.  Tilapia, roasted tomatoes, and leftover quinoa.  I probably had a side salad with this also to help fill me up.  And it was all covered with the Everything But The Bagel Seasoning.  #becausewhynot

Most of our dinners around here now consist of a lean protein and 2 side veggies.   Veggies in the rotation include roasted squash and zucchini, grilled corn, sugar snap peas, roasted broccoli, sweet potatoes (Chris eats baked potatoes instead), and roasted tri-color peppers.  We also eat our fare share of canned corn and canned green beans.  And here’s a little tip:  next time you eat canned green beans, put in a little bit of olive oil, a little bit of red wine vinegar, garlic powder, salt, and pepper.

This is something that I tried, but I can’t say I loved it.  It was a quick and easy lunch for sure, but I don’t think I’ll be buying it again.

And I tried these soft shrimp tacos for the first time this week!  I ate all 3, and they were delish.  A little guac with chile lime seasoning on top and I was good to go!

*What I’ve been up to.*

Last weekend I went to a blogging conference in Austin with two of my blogger babes, Cassie and Megan.  We learned lots and it was fun to get to meet some bloggers in other realms like food and DIY.  In fact, I think we were the only fashion bloggers there and we were such tiny little fish in a huge sea.  These bloggers are LEGIT and get millions and millions of page views!  So cool!

I wasn’t great about grabbing pics with my girls, but I did manage to grab a couple of outfit pics.

Cassie and I headed there together, and my new camo t-shirt dress was the perfect choice for the car.  My plan was to change before we headed to our first session, but I ended up feeling like this was definitely cute enough for the meetings, so I kept it on!

*What I’m doing this weekend.*

We’ve got plans with my sister’s family on Friday night.  Nothing is planned for Saturday, and I’m pumped.  On Sunday, I will be going to church with my little family in the morning.  In the afternoon, both sets of grandparents and my sister’s family will be coming over for an early dinner and an Easter Egg hunt!

*What I’m excited about.*

These beaded earrings.  Yeah, they’re really good.  They are a gorgeous combo of green and teal, and they pack quite a punch!

The dress is a fabulous stretch cotton, and the ruffle details on the sleeves and the skirt are so fun and flirty!  It has a great fit that is incredibly flattering.  I’ll be showing this on me in the next couple of weeks.  It’s very similar to the LOFT dress that I showed last week (click HERE to see me in the LOFT dress).  I won’t be keeping both dresses (I ordered them at the same time, they just arrived a week apart), so I have to decide which one I like better.  This one has a bit more casual of a vibe due to the stretch cotton material, and I think it might be more what I need in my closet.  I went with a 6 in this dress.

*What I’m watching.*

We are watching American Idol again.  I’m on the fence at this point, but I’ve loved American Idol for so long that I’m giving it a chance.  We are also catching The Voice on occasion, and I have to say, I enjoy it every single time I watch.

*What I’m listening to.*

Well, we are getting our second installment of The Greatest Showman around here.  Chris and I went to see it in a theater, but we watched it with Carter at home this past weekend.  And now Carter is hooked.  He is dancing around like a maniac all fired up.  I finally had the songs leave my system (they were on repeat for awhile!), but now they are back and in full force.  I can’t believe the movie didn’t win more awards!

*What I’m working on.*

*Favorite Easter Tradition*

I mentioned what we do for Easter a couple of questions back when I told y’all what we are doing this weekend.

This is my favorite Easter picture from year’s past.  Brody was not even a year, and Carter was 5.  Brody’s stank face makes me laugh every single time.

So this is the other black dress I mentioned earlier in the post.

It’s fun and flirty and can easily be dressed up or down, but it is on the dressier side (vs. the stretch cotton one in the flat lay above).  You could wear this to many different types of events.  At 5’4″, I’m in the 6 petite and thought it fit great. If I didn’t have to accommodate a large chest, I would have gone with the 4 Petite.

I love it with colorful earrings and gorgeous heels to match!  Sadly, the heels were too high for me, but they have excellent reviews! They are STUNNING, but since I don’t wear heels very often at all, these were just too tall for me.

This blouse is GORGEOUS and has excellent reviews.  It has a high neck, the arm holes are flattering, and it has a sweet little tie in the back.  I’m wearing it here with white jeans, but it’s definitely nice enough to wear with nice slacks or a pencil skirt.

I’m wearing a small in the blouse (true to size), a 27 in the jeans (true to size), and I sized up to a medium in the denim jacket.

You saw this top on me several weeks ago with white jeans and a denim jacket (click HERE for the post).   The layered sweater is mixed media and perfect for Spring.  The front is sweater like material, and the back is the same “tulip garden” material as the peplum hem.  I love the elbow length tulip sleeves, because they lay with a bit of a ruffle and are so feminine.  The top is very flattering and the colors are gorgeous for Spring and all the way into Summer.  I have a small in the sweater, but if you don’t have a large chest, I would suggest sizing down.  It’s quite roomy.

And look how pretty it is with these blush jeans!  The jeans are a very pale and soft blush (which was what I was wanting), and they are super stretchy and comfortable.  I have my regular size 27s in these jeans, and they are wonderfully soft and stretchy.

You know this tee and this denim jacket are long time favorites, and I couldn’t resist this skirt.  It has embroidery AND pockets.  Well played, LOFT.  ?  I sized up to a medium in the tee and the jacket.  I’m wearing  a small in the skirt, but I’m actually thinking of trying the x-small because it’s a little big in the hips.  The whole outfit is incredibly comfortable, but looks really put together!
