MY NEW FAVORITE LUNCH
Cottage cheese is having a moment, y’all. Remember when cauliflower became cool? Well, now cottage cheese is cool too. WHO WOULD HAVE THOUGHT.
I mean, I’ve always liked cottage cheese just fine, but I’m having lots of fun seeing all the new recipes people are creating with it to give their meals an extra punch of protein.
I had this for lunch for the first time last week, and I’ve already eaten it several times since then. It’s obviously super healthy and still really tasty. I almost always top the cottage cheese with a mixture that includes cherry tomatoes, cucumbers, purple onion, avocado, and fresh dill. And then I top it all with Everything But The Bagel Seasoning.
This day I didn’t have any additional protein, but I also like to include some shredded or cubed leftover chicken, sometimes I add a hard- boiled egg, but my favorite way to eat it is with cold leftover salmon. YUM.

A GREAT CARDIGAN
Cardigans you love are necessary for spring dressing. They are the perfect light layering piece, and this one is really great!
This cardigan is one that I’ve shown in several different colors over the last several years. It’s a staple both at Nordstrom and in my closet. I’m wearing the “tan cobblestone heather” and think it’s a beautiful neutral, but I wear the black one alllllll the time too. It’s super lightweight and although it looks kinda dressy (it’s great for the office), I still love it worn casually with jeans and sneakers. For size reference, I’m wearing a small.
This outfit is simple, classic, and made up of great basics.

These jeans are actually from last year, and I continue to love them. I named them a must have, and you’ve probably seen them on the blog over a hundred times. To me, they are like if a skinny jean and a straight jean had a baby. And they have the Ab’solution technology that slims, shapes and lifts in all the right places!
They aren’t super fitted on the calf or around the ankle, and the ankle has a little split on the side. They are great with sneakers, sandals, booties, flats, wedges, whatever! These are great for spring and summer because I love to have just a tiny bit of ankle showing! Most size down in these. THESE ARE AWESOME JEANS. They have the perfect amount of stretch.

The sneakers are a great neutral fashion sneaker that will pretty much go with everything in your closet. Comfy and true to size.

LOVE cottage cheese too. One of my fav snacks is cottage cheese w/ pretzels. I dip the pretzels in the cottage cheese like a dip…. yummy!

I make a cottage cheese “salad” by adding chopped tomatoes, green onions, sweet peppers, and cucumbers (My mother always added carrots and radishes too.) with plenty of black pepper. NOW, I am definitely going to have to try it with the Everything seasoning.
