WHAT WE ARE EATING 

This is the base of a salad that I love to make. I typically add in tons of butter lettuce to the mix you see below, top it with croutons and whatever dressing I want, and toss it all up like a regular salad. But sometimes I even eat this combo just as a side dish (without the lettuce). This little mix is awesome on top of cottage cheese or hummus too.

What you’re looking at: cherry tomatoes, avocados, purple onion, and grilled corn cut off the cob. (I like to grill extra corn when we are having corn as a side dish, because I love adding the leftovers to salas throughout the week.) I toss this mixture with a little olive oil, red wine vinegar, and a seasoning blend that’s a mix of kosher salt, lemon pepper, garlic powder, and coarse ground pepper. I let it marinate in the fridge a bit, and it’s just so flavorful.

For dinner this night we actually had a frozen pizza (#fancy), but it felt like a real dinner with this yummy salad served alongside of it.

I had this on a solo dinner night when Chris and Carter were out doing something.

It looks delicious, right?

You’re looking at leftover steamed broccoli, and y’all, that’s a frozen Lean Cuisine lasagna. You never would have known right?

I cook the lasagna for 4 minutes, and then I add a little bit more of grated low fat mozzarella cheese on top. I use a huge spatula to help slide it out of the plastic dish and put it on a real plate or in a real bowl, then I sprinkle some dried oregano and basil on top. VOILA!

Remember when I did a post on the Ninja Combi oven? I’ve cooked several things in it since getting it and have truly loved everything I’ve cooked, but the meal I go back to again and again is the salmon and rice meal that I showed in the original post.

I cook up to 4 salmon filets, rice, and either green beans or broccoli all in 13 minutes AND IT’S INCREDIBLE. It blows my mind that I can do it all in THIRTEEN MINUTES.

But I’ve recently simplified things even more. The original recipe called for a marinade that took a bit to throw together….. so instead of making the marinade, now I just use this Magic Salmon Seasoning. And I have to say, there does seem to be a little bit of magic in it.

I generously coat the salmon in the seasoning rub, AND THAT’S IT. I love it hot right when it’s done, but it’s also delicious cold on a salad if there are any leftovers.

WHAT I’M WORKING ON

WHAT WE’VE BEEN UP TO

We spent Memorial Day at the ranch with friends and family. I actually didn’t get that many pictures, which is a direct reflection of how much fun we were having (because my phone was put away the majority of the time). We spent both days at the lake and the nights just chilling at the ranch house.

You can’t see it, but that’s a tiny little frog that Bennett (my 4-year old nephew) is holding… hence the huge (and slightly nervous) smile. 🙂

WHAT I’M REMINISCING ABOUT

This was last Memorial Day…

And check this out! This year Bennett caught a frog. Last year, he was so proud of the cricket he caught.

I also found this picture from last year (when looking for the Memorial Day 2023 pics). It’s another one of the cousins when we went to see Brody play in a tournament.

We are re-watching Yellowstone, and it’s just as good as the first time around. If you haven’t watched it yet, you need to give it a try. Even if you think you won’t like it. TRY IT.

WHAT I’M WEARING / SHOPPING FOR

I wore this t-shirt all weekend long. I wore it one day with denim shorts, and I wore it one day to the lake as my cover up.

You definitely need to grab it for the 4th! It’s SO CUTE! The graphic says ‘Loves Jesus and America Too”. For size reference, I’m wearing a medium. A medium is true to size for me in a tee like this, but this one was much longer and wider than most sized mediums tee. You might want to consider sizing down, but I happen to like it oversized.

I bought the pillow/slipper sandals on a whim, and I’m glad I did. Now, be prepared for the fact that they are very chunky, but they are also very comfy. They’ve got over 40,000 5 star reviews.

WHAT ARE MY RECENT AMAZON PURCHASES

Y’all know I recently did a pantry re-do. Well, I added some additional pantry storage baskets this last week and think they are great.

They are high in the back and low in the front, so the boxes inside are easy to see, and they just make the pantry look so neat and organized. They fit 3-4 boxes in each of them depending on how thick the boxes are, but they also obviously hold chip bags or whatever else you would like to fill them with.

I recently bought this set of dish towels. I gave one set as a gift to a friend for her birthday and kept one for myself.

Look how cute the patterns are! This is the “blue”, but there are several color/pattern choices to choose from.

I just think they are the cutest!

I added this organizer to my bathroom, and it’s been a total game changer. It holds soooooooooo much, I can tuck it away in a cabinet, and everything in it can be accessed so easily. HIGHLY RECOMMEND.

It can be used in the pantry too of course, but it’s functioning really well in my bathroom.

I ended up buying this hairdryer and this curling iron for the ranch. We go so often, and I get so tired of hauling these things back and forth, so I found products with excellent reviews that were also super affordable. (Like I love my Dyson hairdryer at home, but I don’t need it at the ranch.)

I’ve been very happy with both purchases. The hairdyer dries my hair quickly and has both force and heat settings. I love that it came with this round brush too. The curling iron does a great job creating a curl, and I like that you can close the barrel while still pulling the hair to its desired position before twirling it into place. But if you have long hair, this curling iron isn’t for you. The barrel will be too short for long hair.

I’m showing you this candle warmer again because I love it so much. I have several different styles of warmers now, but I really like this one because it has high, medium, and low settings.

And the candle? The candle isn’t from Amazon, but it’s from Walmart, so it’s just as affordable! I’ve now purchased 3 candles from this line, including “calm”, “glow”, and “serene”. We love them all.

And since we are on an Amazon home roll, here are some more Amazon items I have in my own home (that I’ve shown you before and still love).

I grabbed this lamp from Amazon and we love it! It’s a perfect neutral, and the texture on the jug base is awesome. (I attached that tray to the wall with command strips.)

Here are some more accessories from Amazon…

This wood bowl is so pretty and unique. It comes in 3 sizes, but mine is the small which is 8″-10″. Each bowl is hand-carved by skilled artisans, so no two are exactly alike as in nature, color, or shape and the measurements may vary a bit. I think this is such a great find!

These rustic rope balls come in a set of 8, and all 8 fit nicely in the bowl. I like the different patterns and textures and really love the addition of both the bowl and the balls to the room.
