I’m linking up today with Mel at The Larson Lingo for her annual cookie exchange!
And with Schue Love for Christmas Cheer to the Blogosphere!
This cookie doesn’t “look” Christmassy.
But it is.
Why?
Because it will bring you joy.
Yep, this cookie can bring you actual joy.
I’m telling you, you guys won’t be the same after this cookie.
At least your waist won’t be.
But don’t worry.
People will like you more after you feed them this cookie.
So, you might be chunkier….but you will be everybody’s favorite friend…
so you won’t really care about the extra poundage.
These are SO easy and SO FLIPPING GOOD
They are crunchy, chewy, sweet, and melty (it’s totally a word).
That’s a good combo for a cookie.
I found these on Pinterest last summer and I made them the same day I found them.
Just look at them!
My friend Shay blogged about them HERE.
If you’re not a baker, don’t worry! You’re basically just layering ingredients.
Shopping List
Graham crackers
marshmallows
refrigerated chocolate chip cookie dough
Hershey chocolate
Preheat oven to 375 degrees
Lay graham cracker squares side by side on baking sheet.
Place
2 tablespoons of dough on each graham cracker square.
2 tablespoons of dough on each graham cracker square.
Press dough down so that it adheres to the cracker.
Bake for 5 minutes.
Remove from oven and top each cookie with several marshmallows (4 or 5), pushing them into the dough as well. Or…there are now these really cook stackable marshmallows that would be PERFECT for this recipe.
Bake
for 5 more minutes or until cookie looks brown around the edges and the
marshmallows are nice and gooey.

I actually cranked the oven up to broil for a couple of seconds, and watched the marshmallows closely. I removed them as soon the marshmallows got some color on them.
Remove and press one Hershey
rectangle into each “cookie”.

Cool on wire rack and enjoy.
Another great thing about this recipe is how easily you can adapt it.
Got a craving, and just want one for youself? Easy. Just assemble one.
(And let’s just be honest, you might as well make 2. Let’s not kid ourselves here.)
Have people coming over?
Make a couple dozen!
Thanks Mel for hosting the cookie exchange!
(Shay and I have become bloggy friends with Mel..and we LOVE her.
We text up a storm, and we are even exchanging Christmas cards!
You should be totally jealous of our friendship.

We are a laugh riot.)

I think everyone needs some stretchy pants around the holidays or they could just workout so they don't put on any holiday weight.

Oh yeah, and thanks for linking up!!!

those look really good, Sheaffer! I like that they're individual cookies, because s'mores bars are usually hard to cut evenly/not-messily!
